Let me clarify: I am coming up hot on 25 years old. I have no children. I basically have started eating baby food for breakfast.
I’ve been trying to really crack down on my eating habits since my metabolism has never agreed with me eating bagels and cream cheese or muffins or anything of the sort for breakfast, but I’ve been pretending like it’s cool to do that for the last few months. I posted this quinoa breakfast last winter, but to be honest, I got sick of it pretty quickly. I prefer savory quinoa, and I prefer a sweet breakfast. The twain were not meant to meet for me.
So I have turned to the sweet potato, that staple of baby food. Yes, mashed. I roasted up a few sweet potatoes on Sunday night, peel them, cut them into big chunks, and popped them in a Tupperware.
Then, when I’m running to leave the house in the morning (I am always late), I can pop about half a sweet potato in the microwave with a little bit of butter for 30 seconds. A little fork mashing, a little cinnamon, and a little sweetener (maple, agave, honey, what have you) and those are tasty and ready. Then I slice a banana on top and add a dollop of nut butter. This takes me under two minutes, and I just take it along with me lunch to work.
It is SO satisfying, both on the flavor front and filling.
